Daing, pronounced “dah-ing” is also known as tuyo (two-yo) or bulad (boo-lawd), and is a type of prepared fish that is seasoned and dried to preserve. While it’s a poor-man’s dish, it’s one of my favorite comfort foods. My mom usually fries it before eating, and we serve it with rice and vinegar to dip. Sometimes, my mom prepares “ensalada talong” to go with it, which is literally “eggplant salad” and is comprised of roasted eggplant, fresh tomato and onion, with a bit of vinegar or lemon for acidity, and some fish sauce. Yum!
